Surprisingly difficult question, the only ride I can think of that I loved but have only managed one ride on is probably Superman at Parque Warner I guess? Great ride, intolerable ops.

Colossos at Heide Park.

The first time I went to the park was with CF. I can't remember the details now - maybe it was down for most of the day - but we only got one ride on it near the end of the day. When I revisited the park a few years ago, it was during its prolonged SBNO period.
Didn't see this until now. Slade had arranged ERT on Colossos that evening, but it was down all day and they moved the ERT to Desert Race instead. However, they managed to get Colossos running for one ride at the last minute. The park provided a few bottles of bubbly to celebrate before our ride, which the underage members really enjoyed. 🥂

On topic, I'm much like everyone else: I always re-ride the good ones. The only exemption I can recall was Thriller at the Oktoberfest. I rode it once before it was relocated to the Gröna Lund parking lot for a year (1996) before heading to Six Flags AstroWorld (Texas Tornado) from 1998-2000, then to Six Flags Marine World, aka Discovery Kingdom (Zonga) for the 2003-2004 season before ending up in Mexico in 2008, where it ran once a year at the Isla San Marcos Parque Temático festival until 2013. I never made it to any of those other locations before the coaster was moved/retired.:(

This might sound weird but Colossus at Thorpe.

But that's only because I do make an effort to do re-rides and almost always visit parks off-season and thus have an opportunity to do those re-rides, and Thorpe was a relatively brief visit with a group and Colossus was on 45 minutes. It was alright. But other coasters I've only ridden once include Skyrocket II clones, ancient Vekoma loopers, powered coasters and the like, so yeah.

Titan Max at the now closed Space World.

The queue was a miserably slow line basic with offensive dispatches. Could have got through half a dozen times if it was operated well. About a month before it closed for good so I suspect was running especially janky. But the enormously fun kind with other passengers laughing as we went round square turns. Fascinating trains too with S&S providing hyper replacements for the older arrow ones.
