Recently, I was able to catch Kings Dominion while on the plane to DC hence this thread.

When on a plane last summer I just happened to look out of the window at the right moment and saw Stealth and the rest of Thorpe Park below. I don't have a picture though sorry.

I've (unfortunately) connected through Charlotte twice and both times I've seen Carowinds on approach, once flying in from CUN (Cancun) and once from TPA (Tampa). I started a running joke saying, "Man, it looks so tiny, oh wait it is!" My dad nabbed this one on approach from Cancun so I have to give him credit for this one.
 
Yeah, you can see Thorpe sometimes coming out of Heathrow.

We saw Dorney flying in to Philadelphia, that was fab. I can't think of many others.

There's the obvious Port Aventura from the tarmac, but I don't think I've seen it from the plane itself.
 
Depending on direction and which side of the plane you're sitting, you can get some amazing views of Disneyland when you fly in/out of Hong Kong since the airport's really close. Never tried to take a picture though.
 
Ive seen Six Flags over Georgia flying into Atlanta, but alas, that pic is lost due to changing of the phones :-(
 
Don't have pics as I am at work, but:

SeaWorld San Diego is easily photographable from take off. The airport is a mile or so away.
Depending on direction of approach you fly past Busch Gardens landing in Tampa.
Depending on approach you fly right over SeaWorld in Orlando
Depending on approach you fly right over Disney World in Orlando (actually my last 3 flights have taken this route).
